Vegetable is a catch-all term for edible plants that cannot be otherwise classified. This food group includes root vegetables (potatoes, parsnips, radishes etc.); leafy vegetables (kale, arugula, lettuce, etc.); and seeded vegetables (tomato, squash, etc) that are technically fruit but are prepared and eaten in savory dishes.
